The Cuba Garlic Festival is currently gathering garlic recipes for a Garlic Festival Cookbook to be released this year. Recipes will be collected for appetizers, beverages, soups, salads, vegetables, main dishes, breads, rolls, desserts and miscellaneous, such as pesto, jams, jellies, marinades, etc. Please include recipes using seafood or shellfish, beef, pork, chicken, eggs, cheese, beans, vegetarian products, fruits, vegetables, grains, and pasta. Recipes should be original, with garlic being a key ingredient.
The Cuba Garlic Festival Cookbook is a fundraiser, the proceeds of which will go to the Cuba Chamber of Commerce to pay for festival costs, community projects, and local charities. By submitting a recipe, the author/cook agrees to give permission to the Cuba Garlic Festival Committee to freely use their original recipe in this cookbook, and any other future publications. No additional permission will be required. Interesting garlic quips and folklore are also desired to add fun reading to our volume of recipes. These additions should be no longer than 100-150 words. We are also gathering biographies on local garlic growers, and these essays have a maximum of 200-300 words. Submissions of a garlic glossary (a list of garlic terms to know, grow, and profit from) will also be collected. A separate entry form must be sent with each recipe you submit. They may be downloaded (below) or picked up at the Cuba Library. Please type or neatly print each recipe on the front side of a piece of paper. Please submit all cookbook entries with entry forms to: Cuba Garlic Festival Cookbook c/o Cuba Chamber of Commerce P.O. Box 233, 22 Water Street Cuba, NY 14727 The deadline for recipe submission is APRIL 15, 2009.
